As Director of Catering, Erica Hinshaw brings years of experience along with a superior sense of style and sophistication to the Estancia La Jolla Hotel & Spa. Prior to her arrival in 2006, Erica coordinated weddings at Hyatt Regency Islandia, where she was first able to showcase her astounding attention for detail, her astute eye for style, and commitment to execution. Throughout the years, Erica has dedicated herself to making lasting memories and is truly inspired by the close bonds she forms with her couples and witnessing the love between them. Her distinct passion for what she does played a big role in the Estancia's recognition of being "Best Wedding Venue" by San Diego's ABC affiliate, KGTV-Channel Ten.
For Erica, the most rewarding part of the event planning process comes when she sees the groom's faces as they watch their soon-to-be brides walk down the aisle; the smiles on their faces lets her know they have achieved success.

One of the greatest trends we have seen at Estancia La Jolla Hotel & Spa so far this wedding season is scheduling the rehearsal and rehearsal dinner 2 days before the main event, leaving the day before the wedding open for the bride and groom to relax and unwind.
The bride and her bridesmaids can enjoy a spa day, catch up on a peaceful sunrise hike or take in the gorgeous San Diego scenery, such as the Gardens of Balboa Park. Meanwhile, the Groom and his buds can go for a surf , play a round of golf at the legendary Torrey Pines Golf Course, or head to Lefty’s Barber Shop for a classic cut to make sure they really look good for the big day!
